  1. Oh, beating the hell out of a tire with the sledgehammer is WAY more fun than the stinkin’ burpee…and now everytime I hear the song ‘sexy bitch’ I’m gonna think of just that (thanks Mark)! And I’ve been noticing that the blog comments are starting to wane, soooo I’m wondering what everyone plans on doing to stay motivated over the next 61 days?

    my motivation over the next 61 days is to stay within striking distance of your paleo challenge success. i have already strategically mapped out my calendar so that the last 21 days of the challenge will be 6 point days so that on day 90 of the challenge i hope to be precisely 10 points behind you, then with my point bonus catch up with you in a tie – in hopes that we will have to have another 90 day challenge for a tie-breaker.


  3. I think we’re all trying to rack our brains for point-worthy comments. It gets harder every day to come up with a good comment, especially now that we’re all becoming such paleo-pros! I truly feel like paleo is becoming a lifestyle, don’t get me wrong, after the challenge, I will have the occassional non-paleo food, but I’m actually finding I’m enjoying eating paleo

  4. @Greg and Katherine – thanks for the kind words.

    Here are a couple of easy things to toss together if you need to bring something to a new years eve party.

    -Slice fresh figs in half and layer with thin slices of roast turkey

    -Serve small Bibb leaf lettuce as a wrap filled with diced chicken, olive oil, raisins & slivered almonds, dusted with nutmeg

    – fresh crudites (blanched broccoli, sliced carrots, cucumbers & bell peppers) with homemade guacamole

    -Toss sliced apples with lemon, then dust with cinnamon and serve with raw walnuts

  6. If anyone has ever tried the AVEDA WELLNESS TEA, you know it is sooo delicious. It’s also stupid expensive. Like $14 for 20 tea bags expensive. Do this. Fill a tea pot with almost boiling water and drop in one peppermint tea bag and one licorice root tea bag. It tastes exactly the same and is great for after dinner when you want a taste of something sweet. No honey or sweetner required.

  7. Kristin, I noticed the same thing about the blog comments. I think that everyone is just really busy. Personally, for me, just coming off a semester of grad. classes, I was finding that commenting was becoming like homework to me. I was thinking about it too much, trying to write daily, and it was stressing me out a bit:)

    I am still enjoying the challenge, hitting the WOD’s hard, and feeling great. I haven’t been making many new recipes, just cooking variations of recipes that I’m used to. For me, keeping it simple is the best way to stick with it for life. My meat, veggies, and fruit are constantly varied! I cook them differently, use a variety of seasonings, and eat them in unlimited combinations:)

  8. I have currently made it thru various holiday parties, Xmas, my birthday, my best friend and her family visiting( we usually just eat and drink) now just new years eve! Unbelievable! Oh yeah! And yesterday I sat in a car with 7 people eating mcdonalds on our way to Disney on ice! I think I almost fainted! Lol- for anyone who knew me prior to this you would know I never would have made it thru all that temptation! Couple tiny slipups but I still on track and it feels so great:)

  9. Paleo Apple Pie

    Flourless Pie Crust
    1 1/4 c almond meal
    2/3 c coconut oil
    1/4 t sea salt
    5 T icy water

    Combine almond flour and sea salt in a mixing bowl, stir in coconut oil and mix until mixture
    resembles coarse crumbs. Mix in water, 1 T at a time, until dough is formed. Refrigerate
    until ready to use. When ready, roll out and place in a pie dish. Fill with filling (recipe below) and bake at 450 F for 15 minutes or until crust turns a rich golden brown.

    Apple Pie Filling
    3 cooking apples, sliced
    1 t cinnamon
    1/4 t grated nutmeg
    1 T olive oil

    In a large bowl, combine apples, cinnamon and nutmeg. Toss until apples are evenly
    coated. Spoon into pie crust and dot top with olive oil. Bake 30 minutes at 350 F until
    apples are tender when pierced with a knife. Cool slightly before serving.

    Felt so bad for the poor tires today:( Call me crazzy but I would have rather done 100 burpees!See Mark I can’t even hit a tire no matter trying to eat meat!

    I think this week will be the most challenging yet. I’m in NH with my family. It’s been very busy, and eating out is not my strong point. But I’m sticking with it. We went to a Thai restaurant today and ordered curry with no sugar. they actually refused to accomodate us. So Gabe and I left. A little embarassing, but worth it. I was pretty sure my sister was going to kill us, but she was actually super supportive. To make it up to her, I thinking I’ll have to make some delicious paleo curry. Sounds like everyone’s doing great. Keep it up everybody:)
