  1. Breakfast Veggie Bake

    Preheat oven to 350, grease a 9X9 pan w/olive or coconut oil. Beat a dozen eggs and set them aside. Chop 1/2 an onion and saute w/your fav. veggies (spinach, broccoli…). Then fold them into the eggs and add any spices you prefer. Pour into pan and bake uncovered for 20-30 min. until brownish on top and no jiggle in the center of the pan. Cut and serve! They are pretty dense and filling.
