    Had chef Katherine come over for some baking! We made Netties gingerbread cookies and pumpkin bread. The cookies were awesome, but didn’t really like the frosting, tasted a bit too much like it’s main ingredient…shortening. At first the pumpkin bread seemed a bit bland, but had it this am and tasted really good with a bit of almond butter. Never thought I would say this, but I may actually enjoy cooking?! Keep the recipes coming!

  2. Went to a friends house for dinner tonight. I was seated at a table with 10 other people. Because my 10 year old asked if there was anything he could eat that was paleo, it got people laughing and someone brought up paleo/crossfit. Then came the comment “Danielle you won’t last on that you are too good a cook.”
    My response, “I still love to cook and you can eat wonderful food on paleo.” Then someone who was pouring gravy all over his mashed potatoes said ” Those crossfitters are one strange group.”
    Again I responded, ” To me it is not worth the insulin highs and lows I used to get from eating grains. And no I don’t eat dairy or sugar now either. AND I have energy all day long and I have never slept so well in my life. Most people just stared. I told them I used to be like them. I thought “this group” was crazy. Now I am a believer. Two of my best friends who were sitting
    on my right turned to each other and said “Who IS this person?!”

    For me the greatest victory of the night was this:
    I was asked to bring a dessert. While I did bring something paleo I also baked a chocolate cake with creamcheese buttercream chocolate frosting and did not even lick the spoon. I didn’t even want to! I never thought I would say this but sugar holds power over no more. I can honestly say the way I feel now tastes sweeter to me than anything I have ever baked. Every day I feel stronger. Can’t wait for this week’s work outs!

    I want say that I really love this point system with this challenge. It really makes it possible to LIVE with this for 90 days. I was just traveling and had a couple of coffees with cream, some butter in my eggs and didn’t really sweat it. I just took some points off.
    It didn’t derail me, and I’m really grateful for that. Because in the past any variance on perfection would have kicked the guilt in and it would have been over.

    So now 19 days in, and I’m feeling pretty good about it. Thanks Mark and Sarah for this very doable challenge.

  4. dont you love it when someone wants to inquire about the diet, then as the “caring wise diet sage” encourages you to have some balance? introduce a little crack cocaine in our diet, and we are healthier?(go easy bushy, thats just a metaphor) why does the one person not partaking get pressured? it is the guilt voice inside of them. heard it said this weekend that three substances work on the same part of the brain: heroin, cocaine, and sugar. take out the first two, get a load of help. sugar, none. some of us are sugar addicts. if we hang with our sugar addict friends, expect the pressure. we dont need to fold so they feel better eating cake.

  5. Standish just came in from playing in the snow and asked for Hot Cocoa.
    So this is my kids version, for adults I’d double the cocoa powder.

    1c. unsweetened vanilla almond milk
    2T maple syrup
    2t cocoa powder, sifted in.

    bring to a simmer on the stove. Enjoy!

  6. I’m glad everyones feeling so wonderful! That was supposed to be sarcastic….. I am having a hard time, I haven’t fallen off but I am finding all this holiday cheer extremely difficult. Currently at school I am surrounded by chocolate chip cookies, peanut butter balls, toffee, paninis, and various other things. I’m sad. I’ll make it through I’m sure just a little challenging right now! Can u tell I have an odd relationship with food? Lol!

  7. I’m starting to get very adventurous with my paleo cooking …and am actually starting to really enjoy it! All the recipies have been great (Special thanks to Nettie for organizing them)! The only issue is that I can’t seem to stop baking…I am currently surrounded by cookies and fudge! Time to start working on the will power…was almost easier when my choice was limited to what kind of fruit to have with my almond butter 🙂

  8. Danielle, I love your post, and I have to tell you, your recipes are keeping me going. I tried a variation of your almond cookies last night, and liked them a little too much ( I ate 4 of them, but they are small, so it was like eating 2, right?) I ran out of almond flour, so used 2 cups almond flour, 1/2 cup coconut flour, then instead of the cherries added some unsweetened shredded coconut, and really liked the consistency and flavor.

  9. Erin Hang in there. I cook 4 courses a night of non paleo food, I feel your pain. What progress are you seeing that can push you forward another day?
    You look incredible! It’s working. How are your woods?

  10. I noticed that many of the recipes call for using a food processor; well I decided to use a blender because I don’t have one. I made the Crispy Herb and Nut Chicken and threw almonds into the blender and it worked…perfect “breading” to chicken.
