Yes, you all can do it! Have kids get their own snacks so it doesn’t tempt you to nibble, have them eat it in their room(double win, they will love it)… I would rather clean up the crumbs or spills than nibble!! lolStay strong everyone, it pays off in a month.
I’m not sure if I’ve posted this recipe before – these are easy and delicious and way better than the chocolate chip cookies I would usually make on a snow day!
Pumpkin Pie Muffins

Serves: 12Ingredients3/4 cup organic pumpkin puree1/2 cup coconut flour1/2 cup coconut oil, melted6 eggs2 tsp organic vanilla1/4 cup raw organic honey, melted2 tsp pumpkin pie spice1/2 tsp homemade baking powder (no cornstarch)handful of walnuts
InstructionsPreheat oven to 400 degrees fahrenheitSift the coconut flour and spices together, then add baking powderIn a separate bowl, mix all remaining ingredients except walnuts until well blendedAdd the sifted flour and spices to the pumpkin pureeMix well and divide the batter between the muffin pans and sprinkle with chopped walnutsBake for 18-20 minutes or until doneEnjoy
Got stuck at work last night 🙁 finally made it home but they made us breakfast (aka banana bread and muffins) and i was hungry… *sigh* i guess i will officially start the challenge now that im home.
