    I will say- what a tough first day for the challenge- snow storm- KIDS stuck in until the wind stops!!! Ahhh!!

    Yes, you all can do it! Have kids get their own snacks so it doesn’t tempt you to nibble, have them eat it in their room(double win, they will love it)… I would rather clean up the crumbs or spills than nibble!! lol
    Stay strong everyone, it pays off in a month.

    I’m not sure if I’ve posted this recipe before – these are easy and delicious and way better than the chocolate chip cookies I would usually make on a snow day!

    Pumpkin Pie Muffins

    Prep time
    10 mins
    Cook time
    20 mins
    Total time
    30 mins

    Serves: 12
    Ingredients
    3/4 cup organic pumpkin puree
    1/2 cup coconut flour
    1/2 cup coconut oil, melted
    6 eggs
    2 tsp organic vanilla
    1/4 cup raw organic honey, melted
    2 tsp pumpkin pie spice
    1/2 tsp homemade baking powder (no cornstarch)
    handful of walnuts

    Instructions
    Preheat oven to 400 degrees fahrenheit
    Sift the coconut flour and spices together, then add baking powder
    In a separate bowl, mix all remaining ingredients except walnuts until well blended
    Add the sifted flour and spices to the pumpkin puree
    Mix well and divide the batter between the muffin pans and sprinkle with chopped walnuts
    Bake for 18-20 minutes or until done

    Got stuck at work last night 🙁 finally made it home but they made us breakfast (aka banana bread and muffins) and i was hungry… *sigh* i guess i will officially start the challenge now that im home. Stay safe everyone!
    PS- let us know if you are still gonna do the rock climbing tonight bc I would tove to come and try it out!
