I make this every summer and am fortunate to have some to spread on everything right now.You should make it too. It goes on ANYTHING, including eggs. Kind of like a grown up ketchup.
Tomato Jam (not sweet, tangy)
4 medium tomatoes (about 1 3/4 pounds)— seeded and coarsely chopped1/4 cup cider vinegar3 tablespoons honey1 tablespoon minced fresh ginger1/2 teaspoon ground cuminPinch of cayenne pepper3 tablespoons extra-virgin olive oil4 garlic cloves, minced
Throw it all in a pot, leave it at med low heat, stir occasionally. It will be ultra liquidy, then will start to get thick, then will turn into a paste.You want the liquid to evaporate.Store it in a mason jar in your fridge.If you want it hot add extra cayenne.

I’m a little sad because my mayo turned into a yucky oily mess:( put the oil in too fast maybe?
Probably, but you can rectify any emulsion by adding a drips of cold water to it while stirring or in the blender/food processor.
Does anybody have any good ideas for snacks? I have been doing fruit and nuts but want to get away from so much of that. I also don’t want to cook stuff for quick snacks (I know, I am lazy).
Greg, I want to order 25 grass fed beef jerky packets (not the paleo kit).Hard boiled egg, small piece of fruit.cold cuts, few nuts, little fruit…apple and almond butter…I tend to eat 3 meals and a snack so I guess I’m not a big snacker. I think I use fruit as a carb with a snack as opposed to my meals I’m doing all vegetables.

2-4 chicken breasts1 egg 1/2-cup almound meal1/2 cup coconut flackes
1. mix together almond meal and coconunt flake in a bowl2. beat egg in seperate bowl3. dip chicken breast in egg and roll in dry mixture4.pan fry in coconut oil
I am so glad you guys like the videos. I wasn’t sure if they were too dorky. 🙂 Erin the problem is surely too much too fast with the oil. I have heard a couple of people saying today they are having trouble with it. I will do my next video on that! & Liz I will send some your way no problem.
Today’s recipe is a great snack.
Thaw a handful of frozen, cooked shrimp. Mix a few tablespoons of paleo mayo with a little hot sauce or even better if you can find a good asian chili sauce without sugar. Use this as a dip. Great with your glass of red wine!
Also I gotta just say…….I steeled myself going into Trader Joes today. Last year at this time I had a very adulterous encounter with the English Toffee that comes around in December. I mean like a whole tin of it. I passed by it like a warrior princess only to be assaulted at the checkout lane by salted caramel butter cookies at face level. I fixedly stared them down and left with my bags of spinach, almond butter, and butternut squash and my dignity intact.

Egg Salad – Paleo Mayo and a bit of mustard
Deviled Eggs –Paleo Mayo and a bit of mustard top with Paprika
“Quiche” – Egg Cupcakes (Found on Everyday Paleo) I have not tried to make these yet but it seems like a great to-go snack.
10 -12 eggs whisked well1 green onion2 zucchini3 big handfuls of spinach1/2 a jar of roasted red and yellow peppers6-8 slices of COOKED turkey baconSea salt and black pepper to taste
Preheat oven to 350 and grease with olive oil two muffin pans. Whisk all your eggs in a big bowl. In a food processor throw in the green onion, zucchini, bacon, and peppers and process until finely chopped but NOT smooth (yuck…). Add this mixture to your eggs. Throw your spinach into the processor and finely chop and also add to your eggs. Mix the egg mixture well and using a 1/4 measuring cup, fill the muffin pans (you’ll be able to make 18-20 cupcakes). Bake for 20-25 minutes or until the eggs are set in the middle.

Please let everyone know if you make a recipe that was posted…. For example, Erin made the mayo and Amanda made Katherines Sauce and Paleo Pancakes. Hearing they are great makes me want to make them. It is a sure point and adds to the community. Great Job guys!
I made Dana’s Sesame Seed Crackers and they were great for dipping in some guacamole. I used toasted sesame seeds just because they were on sale and I mixed in a tiny bit of minced garlic for some flavor.
PALEO THAI FOOD! Hey guys, just experimented with making thai food, and it turned out awesome! Heres what I did:Bok choy sautéed in coconut oil, then add a little coconut milk. I then added curry paste, fish sauce, and water chestnuts, and mango chuncks, (next time I’ll add peppers too) then add more coconut milk to make it a full on sauce. In second pan sauté scallops in coconut oil. I also got precooked shrimp from Trader Joe’s. Add all ingredients before serving.What to use for noodles? Slice a spaghetti squash in half, place cut side down on olive oiled cookie sheet, and bake for :30 at 400. Then scoop out the seeds and discard them, scoop out the meat of the squash and use as noodles!When serving, I crushed Trader Joe’s Thai Lime and Chili cashews, and sprinkled on top.Enjoy with a glass of coconut water on the rocks, garnished with fresh berries!
Wow! Tough? Yes! But Paleo is totally worth it. Anyone else feeling really good? WODs are easier. Haven’t taken my allergy meds or my inhaler since I started. No acid reflux. Tons of energy! My only real complaint is I’m a little moody. We got this people! ……Okay 2 complaints: I haven’t had a legitimate poop in 3 days:( Any suggestions? 🙂
I think that Tim has made the Dave’s recipe, the Coconut Chicken, and it was tasty and easy to make.
Here’s a recipe that I think we’ll try soon. Maybe I’ll take it to my family’s holiday gathering so I have a better chance of staying away from the non paleo stuff.
3/4 c flax meal1/2 c desiccated coconut, ground (If desiccated coconut is not available, regular dried coconut can be used as a replacement)1/4 c banana flour1 tsp baking soda1 tsp baking powder1/2 c apple puree (or unsweetened apple sauce)1 c mashed banana (about 2 bananas)1/3 c honey4 eggs, separatedOptional: 1/2 c chopped walnuts
Preheat oven to 360 degrees. Mix all dry ingredients in a small bowl and set aside. Combine apple puree, mashed banana, honey and 4 egg yolks in a medium bowl. Slowly mix in dry ingredients until well combined. In a clean dry bowl whip egg whites until fluffy. Fold into batter, do not over mix. Oil muffin tins and fill with batter all the way to the top. Bake for 35-40 minutes or until the back of a fork springs off the muffin top. Cool and serve.

Nicole – banana flour??? Seems like an oxymoron to me – please enlighten me! I agree with Greg B, Dana’s sesame crackers are wonderful – very easy to make. Recipe doubles well. I bought some sesame seeds at Shaw’s for $5 – then Heather went to Ocean State and got them in a larger container for $1. Not so cranky this morning – things are looking up 🙂
Katey, yeah, more water and vegetables. Then don’t leave your house for a couple of days.
