Please note that Friday we will have altered hours- the plan is that we will have Classes at 9am 10am 11am. Saturday we are closed.

    First I want to say thank you to John for helping me w/ my double unders. I actually got a fw today! Next I want to blog about the challenge. I thought my diet was pretty clean, however, I used spray butter(it says 0 calories) on everything. Anyway, I feel like I have been having so much fat with the paleo challenge using olive and coconut oil and eating many more nuts. After doing some research I found that my beloved spray butter actually has almost 1,0000 calories and 100 grams of fat (of hydrogenated fat) per bottle, and I would go through a bottle every 3 days! Turns out I was having way more unhealthy fats before the challenge. I will never g0 back to spray butter again! Thanks paleo challenge!

    Great job Amanda! Once you get a few, they start coming together. It was awesome to see John really take the time to help Amanda with her DU’s. At C3 I often see people take a genuine interest and enthusiasm in other’s improvements. Thats pretty rad, and personally, it makes me work harder and push further.

    I love all of the Paleo research that people are doing, it is so helpful to all be working together toward a common goal!

    I like how you ask about our “plan” for staying Paleo over the holidays. I think that planning ahead is one of the keys to success. That being said, I have 3 functions in 2 days which all involve food. Thursday night’s dinner will be ham, sweet potatoes, paleo squash soup, and roasted brussels sprouts. Friday am will be eggs, leftover veggies, and banana carrot muffins. Friday afternoon consists of turkey, veggie tray, fruit salad, and paleo apple crisp.

    I have already conquered staying Paleo through a few work functions and am finding that I’m starting to not even notice the unhealthy foods around me. I just never let myself get hungry. I know that traveling and being on vacation is going to alter my routine and might be more difficult, but I’m going into with confidence!

    i have too much respect for everyone here to lie and say i have a plan for staying paleo over the next 70 or so hours.

    pending mark and sarah’s review of my religiously kept challenge records – i’m curious about where we should be now point-wise?

    belly-wise i’m doing ok. i scored a sweet pair of bat-man underwear in a gift swap the other day. when i tried them on, i actually felt like i may be on my way to super hero status.

    Hi guys! I hope to stay as close to 100% paleo as possible, challenging? Yes. But I am going at it with a positve attitude. You know what is a bummer? I don’t like red wine. I’ve always been a white wine girl? Does anyone know what kind of red wine is a little sweeter and smoother when your first getting used to it? I know that’s not really a paleo food question but….:)

    Erin, like you I’m not much of a red wine drinker, I prefer the sweeter white wine. But I have found I like shiraz. Also, when picking a wine, the ones with fruity tones tend to be a little sweeter and less dry.

    My plan for the holidays is to just keep steady. Luckily I only have a few family gatherings to go to and they all are pretty understanding of what I am doing. I will eat before I go and take a few paleo things along to share. For the meals at home, everyone at my house is eating paleo as much as they can with me and making their own sides that I just ignore, so we work it out pretty nice. I have had people making fudge, cookies, cakes and lollipops here all week and have learned to ignore all of that, so everything else should be a snap.

    Erin, as Jane said the fruitier (is that a word?) red wines are probably more your speed, and Pinot Noirs and red zinfandels tend to be a little sweeter than a cab or merlot. Cheers!!

    Paleo is pretty sweet! When people find out what you can’t have, they’re like ‘that sucks.’ Until the find out what you do eat. Mediteranean omelettes, steak, pork chops with apples, coconut custard. I love that I’m trying different fruits and veggies. I love pommelos. And endives. I’ve been trying new greens. I usually just saute spinach or kale with garlic, sea salt and lemon. I tried it with collard greens. Definitely not the same:( Any suggestions? Also, what about mustard greens?

    Squash Soup

    1 butter nut squash, peeled and diced into 1 inch cubes
    ¼ cup diced yellow onion
    1 Fuji apple, peeled, cored and diced
    2 cups chicken stock
    1 cup coconut milk
    ½ teaspoon cinnamon
    Pinch of nutmeg
    Pinch of black pepper

    In a large soup pot add the squash, apple, onion, and chicken stock.

    Bring to a boil and cook for 20-25 minutes or until the squash is tender.

    Add this mixture to a food processor or blender and process until smooth.

    Add the soup mixture back to the pot and add the coconut milk and spices.

    Bring to a simmer and cook for another 10 minutes, stirring often.

    Serve garnished with apple slices and a sprinkle of cinnamon. Serves 4.

    Got stuck on the Vineyard today and with a gasp at eight o’clock this evening realized that i had neither fish oil or vitamin D, this was quickly followed by a minor panic attack. Do you know how many stores that carry those two items are open at eight o’clock on the vineyard two days before Christmas???? For the record there is only ONE and although it may be the most expensive two points yet($30)it was worth it to realize Fish Oil and Vitamin D have become a habit. I guess you were right about the 21 days Mark, thanks.

    Ok, avoiding the 4 DOZEN donuts delivered to the fire station today, along with fudge, candy, cookies and a dozen Cape Cod Charlies cupcakes….it wasn’t as hard as I expected. I really don’t have that many cravings, plus I feel incredible so why ruin a good thing. All I have to think about is how terrible I felt during the first 3-4 days of detoxing from all the bad stuff…never want to feel that way again. (we all remember those detoxing headaches)

    Its like second nature for me to pack food whenever I leave the house…so my veggies, protein, Vit D and Fish oil are ready to travel. The hard part is not insulting the “cook” by not eating what they have prepared. Good thing is that it will be buffet style, so I can keep moving around the room so no-one will be “watching” what I’m eating.

    Everyone is looking so healthy and strong…keep up the great work!

    Just a helpful hint…I was using nuts as a healthy snack during the day. Since I cook with olive oil, I’m getting my fats, so I have cut back on eating nuts. Hopefully that will help with scale…
