    Guess what kids? We can eat sandwiches again. Yeah!!!!!!!! I don’t know about you guys but I really missed them. Today I made this sandwich bread that is grain free, soy free, dairy free and has no sugars! The bread will come out pretty small as there is no yeast in it but so what! You can have teeny tiny adorable sandwiches. Eat two if you have to. For lunch I made mine with spicy paleo mayo, leftover chicken, avocado, and roasted red peppers. I was a happy girl. I am not saying this bread is delicious eaten out of the pan. Its not. For sandwiches though, it really works! Here is how to make it.

    Sandwich Bread

    3/4 cup almond butter (I like the one with flax seeds from T. Joes)
    4 eggs
    1/4 cup almond flour
    1/4 cup arrowroot powder
    1/2 tsp sea salt
    1/2 tsp baking soda

    Grease a loaf pan with a little olive oil. Preheat oven to 350.

    Mix almond butter and eggs in stand mixer or beat with a hand mixer. Combine dry ingredients and add to wet. Mix till combined.

    Bake for 40 to 45 minutes. Allow to cool in a pan for an hour or so.
    Slice as needed. Keep wrapped in fridge.

    I made this for my 3 year old son and my 93 year old client. Both had sore throats and both thought this was really good.
    you can make this in a large or small batch and store it in the fridge.

    water
    chopped up fresh ginger, skin on
    honey
    cider vinegar
    lemon juice (fresh)

    A small batch would probably be 2c of water, 1/4 c ginger, 2T honey and juice of 1/2 lemon, splash of vinegar. put it all in a pot, bring to a boil shut off and let it steep for 15 minutes before drinking.

    Honestly, the only thing I truly miss is sweetener in my coffee.(im choosing to go sweetener free for the remainder of the challenge)

    I miss blue cheese dressing A VERY VERY LOT however I am very excited about the prospect of bread!!! I will be tacking that this weekend for sure… Thank you CF mama! Btw, do you think you could wave your magic paleo wand and do something about the blue cheese dressing 😉

    Bushy… I am. We took all of your money and are heading to Ireland. This whole thing is a scam. Paleo doesn’t even work.

    Chicken soup

    Cover a whole chicken with water. Add a good amount of salt pepper honey (1/4 cup or so) paprika leeks (greens too) carrots, onions (skins are fine) and any other junk you have in your paleo fridge. Boil for a couple of hours until it is falling apart.

    Remove chicken from stock and let cool on a cookie sheet.

    While cooling, in another pot heat oil. Sautee chopped onions, leeks and celery until soft. Add any veggies you like. Our favorite are finely chopped cauliflower, butternut squash, brussel sprouts and kale. strain stock into veggies (be careful of bones) until covered. Bring to boil. When everything is soft, add chopped chicken. Season to taste.

    I have been making this soup every week this winter. It is a great lunch and REALLY good for you.

    Had a yummy ham steak for supper:

    Ingredients

    1/4 cup apricot or plum preserves(sugar/sweetener free of course)
    1 tablespoon prepared mustard
    1 teaspoon lemon juice
    1/8 teaspoon ground cinnamon
    1 (2 pound) 1 inch thick ham steak

    In a small saucepan, combine the preserves, mustard, lemon juice and cinnamon. Cook and stir over low heat for 2-3 minutes. Set glaze aside. Score edges of ham. Grill or pan fry, uncovered, over medium heat for 8-10 minutes on each side, brushing with glaze during the last few minutes of grilling.

    There is vinegar in the mustard – not sure if that’s okay for the challenge or not?

    Anyway, we really enjoyed it.

    Can’t say I’m in it to win it, holiday drinks definetly got the better of me. Also, have kind of found that being a vegetarian is a bit of an oxymoron in the Paleo world. However, I have made a few positive adjustments to my diet because of the challenge and feel better for it. Also, thanks to Katherine, I have finally learned to cook sonmething that isn’t in the micro!

    this afternoon at a housemaster meeting a colleague came in with a squashed italian sub. he put it down on a napkin and left the conference room. all i wanted to do was swipe the bread and leave everything else right there on the table. i held back though. then he came back in with a diet coke and i could have drop-kicked him through the wall.

    i will continue to eat paleo (to the best of my ability) for the complete 90 days simply because i signed on for the challenge (and the health benefits i suppose). but, once i discover that i’m mathematically eliminated from winning the competition – i’m more than likely going to stop taking fish oil and vitamin d because it’s annoying.

    For any of you that bought some of (or at least tried some of) the Paleo Krunch and loved it, here is a home made version. I made this tonight and think it is pretty awesome.

    Preheat oven to 325 F

    In a large bowl combine:
    1/2 cup raw pumpkin seeds
    1/2 cup raw sunflower seeds
    1 cup almond meal
    1 cup shredded, unsweetened coconut
    2 cups raw slivered or chopped almonds
    In a measuring cup combine:
    1/2 cup coconut oil
    1/2 cup raw honey
    1-2 tsp vanilla

    Add the wet ingredients to the dry and combine well. Spread in a thin layer over one or two baking sheets with sides. Place in oven for 25 minutes, take it out and mix it up, then return to the oven for 5 minutes or until golden brown. Let cool on the pan(s) for 5-10 minutes.

    I am still in, fell off for the few days and had a chocolate lava eruption of delicousness. (I am not even a real dessert lover. hmmm I am back on, doubtful that I will win like I thought in the beginning. Many great crossfit ass kickers that go more times in a week than I, hence mathematically less points, but that’s okay, I feel better, maybe look a little better and am enjoying crossfit. I don’t worry or really care about my time in finishing the rounds, I worry and care about getting there and completing the tasks for the day. That is good enough for me.
