Saturday

The 12:00 class is on. Its open gym, so try to pick one of the work outs you missed this week, or work on some skill drills. Watch the weather, and drive safe.

First Responders Challenge: first work out in the challenge is taking place Monday. It is a four man challenge per team, with judging and results recorded. It needs to occur between 11:00 and 3:00 on Monday, so we need to coordinate the time this weekend. Once established, we will post the time on the site. All will be invited to watch, yell, and encourage.

Hi Everybody!!! In a pub with wy-fi so wanted to check in. We are having a great time and miss you all. The countryside is awe inspiring!!! Literally saw a field of sheep with mountains, the ocean and a double rainbow behind them from the narrow pass we were driving through today- one of the prettiest things I’ve seen in my lifetime.
Make sure you cheer on Mashpee/Falmouth police for the Challenge- go get em fellas!
    See you all soon!

Hi guys! Having a great time but miss you all… We have had some great laughs and seen a lot already. Driving on the left side of thr road is terrifying, horrifying and physically I’ll… Kinda like Mario kart in real life. We could have brought you all to stay in our massive 3 bedroom, 4 bath villa with an office and sun room and amazing kitchen. Life is tough… Off to take a bath in our 300 square foot bathroom. Cheers!

Great to hear from you both! Sounds like a trip of a lifetime. Enjoy! You’ve left us in good hands with Jon and Nicole, both natural coaches.

    Kristen,

I was kidding about coming up with a blue cheese salad dressing but after a little experimenting, I did!

Mama’s almost blue cheese salad dressing

    juice of 1/2 a lemon
    3 Tbs apple cider vinegar
    1 tsp onion powder
    2 cloves garlic, minced
    1 tsp kosher salt
    3 Tbs olive oil
    1/4 cup tahini

I know this sounds weird but, Jon walked in the door the other night and I put a spoon in his mouth and said,
D “What does this taste like?”

    J “Blue Cheese salad dressing!”

D “I know! Can you believe it! It’s good right?”

J ” A little too good if you ask me.”

And there you have it folks. A salad dressing that sounds nasty, looks nasty but when mixed with a huge bowl of Romaine lettuce tastes like blue cheese dressing.

Here’s another great Erica inspired recipe:
    Porcini and Pecan Pate’
    1 C pecans
    1/2 c dried porcini mushrooms
    1 C boiling water
    1/2 lB potobello mushrooms, stemmed
    3 T olive oil
    1/2 T lemon juice
    1 t rosemary
    2 dry-packed sun-dried tomato halves
    Sea salt
1.Soak pecans in cold water for 1 hour.
2.In a heat-proof bowl, cover porcini in boiling water. Let stand 15 min. Rub to remove grit, transfer to small bowl. Reserve the soaking liquid.
3.Cut the portobello caps in half. Cut off the dark gills on underside. Slice into 1/4 inch pieces.
4.In a bowl, wiskolive oil, lemon juice, & rosemary. Add portobellos, toss to coat. Let stand 15 min, toss occasionally.
5.In a saucepan, combine porcini & tomato. Slowly pour in porcini soaking liquid, stopping before you reach the grit. Bring to boil, cover and let simmer, 4 min.
6.Drain pecans. Transfer to food processor With slotted spoon, portobello, porcini, & tomato. Puree to course paste, adding 1/4 C of porcini cooking liquid. Season salt to taste.

Mark and Sarah, so glad that you are enjoying a much deserved vacation! Tell Bob and Molly that Tim and I say hello! We miss all of you:)

Great showing for today’s open gym! I love that people are having fun while working so hard. Everyone is making great strides and asking good questions about improving technique with the wide variety of movements that they are introduced to.

Thanks for your kind words Nettie!

I just came home from a family gathering at The Cheesecake Factory! I stayed Paleo by making sure that I ate enough food before going so that I wouldn’t be starved while waiting for a table, and ordered a Cobb Salad minus the blue cheese and dressing. I asked for olive oil on the side and that worked for me. The serving was huge so I took some of the salad home and I’ll add more meat to it for lunch tomorrow. Success:)
